Organic Harvest Soup

Ingredients
1 large Onion, diced
2 cloves Garlic, chopped
2 tbsp. Red Chili Powder
4 cups Vegetable Broth
1 medium Green Pepper, diced
1 medium Zucchini, diced
1 cup Kale, chopped
4 large Tomatoes, diced
1 can of black Black Beans, drained and rinsed
1 small can Corn, drained and rinsed
4 green Green Chilies, diced
1 tsp. Oregano
1 tsp. Cumin
1/2 cup Cilantro, chopped
Directions
– Heat 1 Tbsp. broth in a soup pot; add onion, garlic, green pepper, and tomatoes.
– Sauté for five minutes.
– Add chili powder, broth, zucchini, and greens.
– Cook for five minutes.
– Add beans, corn, chilies, oregano, and cumin.
– Bring to a boil, reduce heat and simmer for 15 minutes.
– Add cilantro, salt, and pepper.
